Can I use shredded cheese in a soup recipe that calls for velveeta?

Hmmm. The shredded cheddar is fine but you know how mozzerella strings? Not good texture in a soup. Might be okay if you put tortilla chips in to break up the strings when serving. I use 1 1/2 cups shredded cheddar and 1/2 cup milk as substitute for Velveeta.
